Oh So Yummy Pizza Dough

  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm water (110 degrees F)
  • 1 1/4 cup bread flour
  • 1 - 1 1/4 cup all purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2 teaspoons sugar
Mix yeast and sugar into warm water and let proof for 10 minutes.
Add flours, oil, and salt and mix well. Knead until a soft, but not too sticky, dough forms.
Place dough ball into an oiled bowl and cover; let rise in a warm place until it has doubled in size.
Meanwhile, preheat oven to 375 degrees F.

Now it's your choice whether to top it and make pizza, or do what I like to do and make calzones. Mmmmmm, yummy calzones!

My Very Own Calzone Recipe
  • prepared pizza dough
  • homemade pizza sauce, pepperoni or other filling
  • olive oil

  • 1/2 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 tablespoon dried basil leaves
  • 1/2 tablespoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • salt & pepper
Directions
  1. Mix ricotta through salt & pepper in a bowl.
  2. Lightly grease a baking sheet with olive oil. Flatten dough into 6 to 8-inch diameter circles. Fill half of the circle with cheese mixture and toppings. Fold dough over and crimp the edges with a fork. Poke a couple of holes in the top with a fork. If needed, brush the tops with olive oil.
  3. Bake in a 375 degree oven for 20-30 minutes.

I'm experimenting with freezing these, too. I'll post back with the results after we've tried some of the previously frozen product.
