Lemon-Pine Nut Ricotta Substitute
2 cups raw pine nuts, soaked in water for a minimum of 1 hour
2 Tbsp lemon juice
2 Tbsp nutritional yeast (optional)
1 tsp sea salt
6 Tbsp water
Grind the first 4 ingredients in a food processor. Gradually add the water until the mixture becomes fluffy like ricotta.
