Oven Roasted Tomatoes

That's the plan for the day, anyway! I've already canned 7 quarts of diced tomatoes from my garden and have at least that many left to can, though I plan to freeze this batch so I can use olive oil to roast them. Oil is a no-no in home canning because of potential botulism contamination.
